VANILLA ALMOND CHEESCAKE

This Vanilla and Almond Cheesecake is a healthy way how to satisfy your sweet tooth because it’s naturally high in protein with no added sugar. The combination of cream cheese, greek yogurt, oats and almond butter makes the cheesecake so creamy and delicious that you won’t resist another slice.


What I love about this recipe is that you can add any flavour you want! Just use a different flavour of Protein and flavdrops. Also, it is really easy to make, it won't take longer than 10 minutes to prepare.


In this recipe, I added Vanilla Whey Protein and Vanilla Flavdrops from MyProtein gives the cheesecake a delicious vanilla flavour. Besides, protein works like a thickener, so you don't need to used additional flour or cornstarch and enjoy the additional portion of protein in cheesecake.

INGREDIENTS


250 grams low fat cream cheese

250 grams greek yogurt/quark 

2 eggs

1 scoop Vanilla Whey Protein - MyProtein

100 grams oats 

80 grams nuts 

30 ml coconut oil

2 tbsp honey 

5 drops of Vanilla Flavdrops - MyProtein 

50 grams Almond butter MyProtein

For topping:

Berries/Almond Butter/ Mint


INSTRUCTION

  1. Preheat oven for 150 degrees, spray thin and put in a baking paper (I used 20x30 cm baking thin) and put the tin with water at the bottom of the oven.

  2. Firstly, we need to prepare crust, in a smaller pot melt coconut oil with honey until combined In a bowl mix chopped nuts with oats, add coconut oil with honey and almond butter.

  3. Stir together until well combined. Put the mixture into the thin and press to the bottom, you can use spoon glass or hand. I found it easiest to use your hands.

  4. Put all wet ingredients, Cream cheese, greek yoghurt, eggs into the high-speed blender, add Protein and mix for 1 minute or until smooth.

  5. Pour the batter on the prepared thin with crust and bake for 45-55 minutes until the cheesecake is still.

  6. After your cheesecake is done, let it cool for 1 to 2 hours and then topped with your favourite topping. You can try to put frozen berries into a pot and heated to a sauce, you can add a bit of sugar and then pour it straight on the cheesecake! Enjoy!
