MANGO-COCONUT CHEESCAKE BARS

From summer season recipes these mango-coconut cheesecake bars are the perfect summer treat! They’re creamy, sweet and SO easy to make.⁠

If you are wondering how to treat yourself;f without sacrificing you summer bikiny body I got you covered. These light and healthier cheesecake bars are high in protein and contains a minimum of sugar.

INGREDIENTS

Crust:⁠

100g oats biscuits ⁠

50g shredded coconut ⁠

1 tbsp peanut butter⁠

50g unsalted butter melted ⁠

Vanilla flavdrops ⁠

Mango pure: ⁠

1 large mango ⁠

Cheesecake: ⁠

500g cream cheese ⁠

100ml coconut milk (thick part from can)⁠

50g sugar⁠

2 eggs ⁠

1 scoop Vanilla Whey Protein

Vanilla Flavdrops ⁠

INSTRUCTIONS:

  1. Preheat the oven to 350F and spray and line an 8×8 pan. ⁠

  2. Combine all of the ingredients for crust in a bowl.

  3. Pour into the baking dish and press it down.

  4. Bake for 8 minutes.

  5. Peal mango and mix with hand blender into pure.

  6. Filling: whisk the cream cheese, sugar, and coconut milk.

  7. Mix in the eggs one at a time.

  8. Pour the batter on top of the crust.

  9. Add the mango pure randomly all around the surface of the batter.

  10. Bake for 50-55 minutes.

  11. Chill for 4 hours and serve
