CASHEW BUTTER CHEESCAKE BARS

What do you imagine when someone says summer dessert? For me it's definitely ice cream, galette and cheesecake! Summer time is time for something fresh and healthy, so I decided to prepare this super easy High Protein Cashew Butter Cheesecake Bars.

As you know Protein is the most essential macronutrient we need for your busy to works and many of recipes are mostly full of sugar and fats. In this recipe I used skyr which is naturally high in protein and low in fat! I also used CASHEW BUTTER, which is high in protein and full of essential nutrients, including magnesium and iron.


It's really easy to prepare so give it a go and try out this recipe.

INGREDIENTS:

80g oats

20g blended almonds/cashews

40g cashew butter (you can use Peanut or Almond butter instead)

2tbsp coconut oil

Honey or flavdrops

400g skyr

1 egg

1 scoop vanilla Whey Protein

30g cashew butter (you can use Peanut or Almond butter instead)

Strawberries + 2 tbsp Chia seeds + Vanilla Flavdrops


INSTRUCTIONS:

  1. Mix oats, nuts, coconut oil and but butter together, add sweater of your choice and place it to the small pan (I used banana bread pan).

  2. Bake on 160 degrees for 10 minutes.

  3. In the meantime mix egg and cashew butter until combined, add skyr, protein and flavdrops.

  4. Pour to the prepared crumble and bake for another 20 minutes.

  5. Let it cool completely.

  6. For topping: cook strawberries with 1tbsp chia seeds until soft. If needed add Vanilla flavdrops

  7. Top the prepared cheesecake and enjoy xoxo
