Joining the latest food trend#pancakecereal. It’s super simple but it takes some time tho. I used regular pancakes recipe and formed mini pancakes with spoon. To be honest, next time I will use some bottle to pour the batter, it will make my life so much easier.

Pancakes cereals can be serve with literally anything. You can topped them as regular pancakes with fresh fruit, nut butter, maple syrup... Or you can enjoy them as regular cereals with milk! (I did not tried that so can't really say how it will taste).
I used fresh berries and my new favourite Peanut Butter from MERIDIAN FOODS.
INGREDIENTS:
70g Wholewheat flour
80ml Coconut milk
1 teaspoon baking powder
1 egg
Vanilla flavdrops - 1-2 drops
Coconut oil
INSTRUCTIONS:
Mix the flour with baking powder.
Add the egg and half or the milk, stir until combined.
Add the rest of the milk and flavdrops and mix until combined. (The butter should be quite thick, if it is not add some more flour)
In large skillet heat up 1 tbsp coconut oil.
With teaspoon form mini pancakes and cook them for 1-2 min from each side.
Top with your favourite topping and enjoy!
