HEALTHIER CARROT CAKE

Healthier Carrot cake with greek yogurt Frosting and chopped walnuts. Moist, fluffy and deliciously spiced. It's so easy to make from scratch with wholesome, healthy ingredients. The perfect healthy treat to bake during these sunny days.

I really love carrot cake but to be honest the normal version is full of calories, sugar and fat. So I decided to give it a go and try healthier variation. And it's so so good, that it taste like the unhealthy one. Just swap oil for greek yogurt for cake to be more moist, add some sugar-free syrup to cut on calories and instead of frosting use fresh Greek Yogurt.

As my boyfriends said I can eat carrots like this everyday! So let's try the recipe below and let me know how you like it.


Ingredients:

250g whole-wheat flour

1 scoop Vanilla Whey Protein Powder

2 tbsp Baking powder

½ tbsp Soda

1tbsp Cinnamon

1tbsp Nutmeg

30ml coconut oil

120 g Greek yogurt

60 ml pure maple syrup

265g grated carrots

3 eggs

180ml milk

40g raisins

40g walnuts

Frosting:

500g Greek yogurt

1 scoop Vanilla Whey Protein

Flavdrops


Instruction:


  1. Preheat the oven to 350 degrees Fahrenheit and grease pan.

  2. In a large mixing bowl, combine flour, cinnamon, nutmeg, baking powder and baking soda. Stir until blended. Add the grated carrots and egg yolks and stir to combine.

  3. To the mixing bowl add oil, maple syrup, milk and Greek yogurt. Whisk until fully blended. Finally add raisins and chopped walnuts.

  4. Beat egg whites until fluffy and thick. Mix with a big spoon, just until combined (a few lumps are ok).

  5. Bake the cakes on the middle rack for 45 to 50 minutes, or until the centre of the cakes is springy to the touch and a toothpick inserted into the centre comes out clean. Place the baked cake on a cooling rack and let them cool completely before frosting.

  6. For frosting mix together Greek Yogurt, Protein powder and Flavdrops until combined and creamy.

  7. Before serving top up with chopped walnuts and cinnamon.
