Cherry Galette - a must bake of every summer and cherry season!
So simple, crumble and juicy. It's perfect summer dessert as it requires zero skills and not a lot of baking. It's quite light to be honest and you won't feel like you ate heavy piece of cake by the time you finish, which I love about this recipe.

Plus you can customise it totally by yourself. If you don't have cherries you can use literally anything from strawberries, raspberries,... Also if you are gluten free just swap the flour for gluten free one.
You totally need to try out this one if you haven't done galette before. You'll need like 15 minutes to prepare it and then another half an hour for baking.
INGREDIENTS:
150g plain flour (gluten-free flour)
75g cold butter
30ml ice water
2 tbsp sugar
A pinch of salt
350g cherries
1 tbsp cornstarch (you can use chia seeds instead)
Egg for egg wash
INSTRUCTIONS:
Cut cold butter into cubes and mix it with flour, salt and sugar.
Gradually add water and mix until combined.
Knead the dough on working surface until smooth.
Chill for 1 hour in fridge.
For filling: mix cherries with 1tbsp of sugar and 1tbsp cornstarch.
Let stand for 30 minutes, then drain juice.
Roll out the dough about 4-5mm thick.
Add the filling on top and fold the edges.
Bake for 30-40 minutes on 350F.
