Rich and Soft chocolate cookies stuffed with a creamy peanut butter surprise! These peanut butter cookies are currently my favourite treat and I think you are going to love them as much as I do.
Besides each cookie have only 147 calories. So, Just one bite and you are sure to fall in love.

INGREDIENTS:
For cookies:
125 grams peanut butter
1 egg
150 grams spelt flour
60 grams cacao powder
2 scoops dark chocolate protein
50 grams chocolate drops
Flavdrops/honey/ sweetener of our choice
For filling:
50 grams peanut butter
INSTRUCTION:
Preheat oven to 375° and line two large baking sheets with baking paper.
Make filling: Scoop the peanut butter into small balls (about 1 1/2") and freeze until ready to use.
Make cookies: For cookies beat together peanut butter, egg and sweetener until well combined. In separate bowl mix flour, protein and cacao powder.
Add dry ingredients into peanut butter mixture and mix well until incorporated. Add chocolate drops and mix all together.
Scoop a tablespoon of the cookie dough and flatten into a pancake-like circle. Place the frozen peanut butter ball on top. Bring the edges of the dough around the peanut butter ball and pinch the edges together to seal, adding more dough if necessary to cover the frozen peanut butter completely.
Place stuffed cookie on baking sheet. Repeat until all dough is used, spacing the cookies about 2” apart.
Bake until the cookies are golden on the bottom,12 to 15 minutes. Serve warm or at after cooled.
