NUTS & OATS COOKIES

If you love nuts, these nuts & oats cookies are must have. They are made with mixed nuts, coconut oil, spelt flour and cinnamon, makes them delicious and perfect for snack or as a breakfast on go as they are packed with slow releasing carbs and fibre.

These cookies are also perfect for vegans, just use spelt flour or oats instead of Whey Protein or just use plant based protein and you will have delicious, healthy cookies.
This recipe is one of my favourites as I love cinnamon and nuts! Also, the nuts provide crunchy taste to your cookies. You can use your favourite nuts, dried fruit or add chocolate on top or add to the batter. I’ve added a sesame seeds and crushed almonds in the batter, sometimes I am adding few chocolates drops straight into the batter, but any fruit or nuts will work well.
If you love easy, quick and healthy recipes this one if for you to try. You can make the batter in few minutes and each tray will take only about 12 to 15 minutes to bake and can be also stored for 5 days.
INGREDIENTS

100 ml coconut oil
100 grams oats
100 grams spelt/oat flour
50 grams hazelnuts/walnuts/almonds
1 scoop Vanila Whey Protein
1tbsp cinnamon
3tbsp maple syrup or honey
For topping:
Seeds/Nuts/Dried Fruit/Chocolate
INSTRUCTIONS
1. Preheat oven to 150 degrees and line 2 baking sheets with baking paper
2. Firstly in blender, mix your nuts on low speed until they are chopped and put them into mixing bowl.
3. Add flour, oats, Vanilla Protein and cinnamon and mix well together until combined.
4. In small pan heat together coconut oil with honey until melted and combined.
5. Put coconut oil and honey mixture into dry ingrediencies and mix together.
6. You can add seeds, chocolate, chopped nuts or dried fruit if you like.
7. Onto baking sheet roll the batter into even balls and use spoon or fork to make a small cookie.
8. Bake for 12-15 minutes, until golden brown all over.
9. Let them cook at least for 10 minutes and enjoy!
10. You can store them in plastic box up to 5 days.
