The best chocolate brownie with fudge centre and crispy, crackly top! It's simple, quick and all you need is just few basic ingredients like butter, cocoa powder, eggs and chocolate.
I will give you a few tips to keep your brownie fudgy-licious:
Use hot melted butter with sugar and chocolate, creates those crackly tops!
Beat in your eggs for a good minute. This step is crucial for that crackly top
Do NOT over beat your batter once the flour and cocoa powder are added. THAT creates air in the batter which will give you cake-like textured brownies.
Try NOT over bake them!
INGREDIENTS:
90g butter
50g plain flour
130g sugar
180g dark chocolate
30g cacao powder
2 eggs
fresh berries on top

Preheat oven to 160°C
Lightly grease an 8-inch square baking pan with cooking oil spray and line with baking paper
Melted butter and sugar together in a medium-sized bowl. Whisk well for about a minute. Add the chocolate and whisk until completely melted and combined.
Set aside and let it cool for 5-7 minutes. Then add eggs, 1 at a time and mix well.
Sift in flour andcocoa powder. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
Pour batter into prepared pan, smoothing the top out evenly.
Bake for 20-25 minutes, or until the centre of the brownies in the pan no longer jiggles and is just set to the touch. If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownie.
Remove and allow to cool to room temperature before slicing into 8 brownies
