CHOCOLATE MUFFINS

Who also loves combination of chocolate, banana and nuts? These muffins are super healthy and delicious made of spelt flour, banana, peanut butter and chocolate. You can take them with you as a snack or just enjoy them as a healtier treat.

I love trying a healthier recipe but still have a delicious taste. As this recipe using a healthier ingredients like spelt flour, peanut butter and protein powder, muffins are more nourishing and you can enjoy extra portion of protein! Prepare them takes no longer than 30 minutes, so you can make them anytime or just a night before and you will have nourishing and delicious breakfast to go.


If you are a chocolate lover you must try this recipe, muffins are filled with chocolate so you can enjoy the chocolate flavour with every bite and as a bonus they are crunchy thanks to hazelnuts!

INGREDIENTS


150 grams spelt flour

40 grams Vanilla Whey Protein - MyProtein

1 banana

1 egg

30ml melted coconut oil

50 grams almond or peanut butter

50 grams chopped hazelnut

100 ml coconut milk or other plant based milk

1tbsp cinnamon

1tbsp baking soda

1tbsp baking powder

50 grams chocolate drops


For topping:Chocolate drops/Hazelnut


INSTRUCTION

1. Preheat oven for 160 degrees, take muffin thin and spray with oil

2. Mix banana, egg, melted coconut oil, coconut milk in blender until smooth and combined

3. Put all dry ingredients Flour, Protein, cinnamon, baking soda and baking powder together and mix together

4. Add wet ingredients into the flour mixture and stir until well combined, the batter should be thick enough

5. Put a one tablespoon of batter into the each muffin mould, top them with some chocolate chips and crushed hazelnuts

6. Bake for 15-10 unites until the muffins are slightly brown and the toothpick comes out clean

7. Serve immediately. Also muffins can be stored in box up to 5 days.
