BANANA BREAD

Looking for a perfect breakfast to go or packed nutrition snack? This banana bread is so easy and quick that you can make everything in one bowl in 5 minutes! It’s made of bananas, peanut butter, oats and protein and has all necessary nutritions to keep you full during the day. You can topped up with almond butter or this delicious hazelnut protein spread from Myprotein.


If you want to do this banana bread vegan just use more almond butter instead of egg and plant based milk.


I struggled to create a perfect recipe for this banana bread, I tried a lot of others trying to put more oats and less nuts or the other way around but I found this one the best as the texture is amazing, it is just so soft and fluffy . Also I love to used the mixed spices and cinnamon because it makes your kitchen smell like gingerbread!


INGREDIENTS

2 bananas 

100g Greek Yogurt/ Milk 

1 egg

50g smooth almond butter - MyProtein 

150g oats 

2 scoops Whey Protein Vanilla

80g Instant oats Vanilla MyProtein or Spelt flour

1 tbsp honey

1 tbsp cinnamon

1 tbsp mixed spices  

2 tbsp baking powder

For topping

Chocolate drops and almond flakes 


INSTRUCTION

  1. Preheat oven for 160 degrees and spray a baking tin with oil and put inside a baking paper

  2. In blender mix banana, egg, peanut butter, milk and honey until smooth and combined

  3. All dry ingredients oats, protein, oat flour, cinnamon, baking powder, mixed spices and mix together in bowl until combined

  4. Pour wet ingredients into dry and mix together until combined

  5. Pour your batter into the tin and topped up with some chocolate drops and flaked almonds

  6. Bake for 20-30 minutes until is slightly brown on top, you can try with toothpick which should comes out dry

  7. Then you can serve bread with nut butter or protein spread and top with fresh fruit. Enjoy!
