Rich apple and cinnamon filling covered in almond crumble crust, this healthier Apple and Almond Cake with a lot of cinnamon, it’s so delicious! It’s super easy and quick to prepare with just few ingredients. Preferred with a cup of hot tea or coffee on rainy winter days.

The following healthy apple pie recipe relies on naturally sweet apples and cinnamon for sweetness, you have the option to use erythritol or stevia if you want to cut on the sugar.

APPLE & ALMOND PIE
Crust:
150 g spelt flour
30 g Vanilla Whey Protein from MyProtein
75 g almonds
60 g butter
90 g almond butter
60 g erythritol
30 ml almond milk
1tbsp cinnamon
Filling:
1,5 kg apples
1 vanilla instant pudding powder / 20 g cornstrach
1 tbsp sugar
1 tbsp cinnamon
1 tbsp vanilla
80 grams almond/walnuts
Crumble crust:
100 grams spelt flour
50 g oats
30 grams sugar/maple syrup
60 g almond butter
1 tbsp cinnamon
Topping
Almond Flakes
Maple syrup
INSTRUCTIONS:
Firstly, we need to prepare crust for the pie. In large bowl mix spelt flour with erythritol and cinnamon.
Add butter and almond butter, mix until well combined. I found it easiest to mix it with your fingers. You can add the milk if you are not having a thick and combined dough.
Transfer your crust into 22 cm tart tin and evenly spread around the tin and tin edges.
With fork make few holes in the bottom.
Now we will prepare filling. Cut washed and pealed apples into small moons and transfer them into large bowl. Add sugar, cinnamon and vanilla pudding and mix well until apples are fully covered.
Add chopped nuts and vanilla extract and mix together until combined. Transfer filling onto prepared crust.
For the topping mix oats, flour and cinnamon together. Add in almond butter and maple syrup and mix everything with your fingers until you are having crumble topping. Don’t worry if is not fully combined together, structure should be similar to crumble crust.
Top up your prepared pie with this crumble crust, add some almond flakes and bake for 35-45 minutes until slightly golden on top.
Let it cool for 1 hour and then serve with maple syrup on top. You can also add toasted almonds, almonds flakes or almond butter on top! Enjoy.
