CREAMY VEGAN PASTA

Trying to have more meatless days a week? This recipe for creamy tagliatelle is so easy a tasty that you will add it to your weekly meal prep. All you need is high-speed blender and 30 minutes to prepare delicious lunch or dinner.



The Creamy sauce is made with cashews, cauliflower, nutritional yeast and plant-based milk makes a rich and creamy sauce! It is a nourishi substitution of normal cream and cheese, so don’t be afraid to try vegan food, just simply blend soaked cashew with other ingredients and your delicious vegan sauce is ready in 5 minutes.


In this recipe, I used tagliatelle because they are perfectly fit with this creamy sauce, but you can use other pasta as well.

INGREDIENTS

130 grams tagliatelle

150 grams cauliflower

1 onion

2 garlic gloves

50 grams of cashews

1tbsp olive oil

2 tbsp nutritional yeast

Water or vegetable broth

Plant based milk


For topping

Coriander, chilli flakes


INSTRUCTION 1. Firstly we need to soak cashews for sauce, pur hot water over the cashews and let it soak while you complete next steps, 30 minutes should be enough

2. Cook the tagliatelle according to package direction

3. Put olive oil into the pan and add chopped onion and garlic and cook on medium heat for 5 minutes, until the onion is slightly gold

4. Pour vegetable broth and chopped cauliflower to the pan, reduce the heat and cook under the cover for next 5 minutes until the cauliflower is done.

5. Put the cauliflower into the blender with soaked cashews without the water and add all remaining ingredients (milk and nutritional yeast)

6. Process for 2-3 minutes until smooth and creamy. You can add salt, pepper if needed. It the sauce is too thick just add more milk or water, if is it too thin add tablespoon of flour.

7. Mix tagliatelle with pasta and stir until well combined.

8. You can top your pasta with coriander, cherry tomatoes or chilli flakes.
